Any idea how the sentries warned the men for the approach of the mortar of a "minenwerfer"?

Hmm...Good question, Erik. I suppose they shouted something that let everyone know to take cover. The diary implies that these shells were slow enough that a sentry could actually see them coming.

Other Warning systems in the trenches.

I imagine the mortars also made a fairly distinctive sound, so they would have had a few second's warning before they hit - they're quite slow projectiles. Probably just enough time to shout a warning, as Cynthia says.
